Air Fryer Vegan Jalapeño Poppers

Looking for a healthy finger food to enjoy with family/friends or even for solo movie nights? These air fried jalapeño poppers will be the highlight of the evening. Creamy on the inside and crunchy on the outside.

Jalapeño poppers are a wonderful comfort food that is perfect for get togethers or for enjoying during a Netflix binge night. I'll admit in my household we like to enjoy snack dinner and this is definitely on the list.

This recipe is also gluten free we used cornmeal and gluten free pretzels to make the breading. We used 10 jalapeños so this recipe makes 20 jalapeño poppers enough to bring to a potluck or serve as finger foods at a get together.

INGREDIENTS:

  • 10 Jalapeños (cut in half and deseeded)
  • 1 cup Cashews (raw)
  • 2 cups Water
  • 1/2 cup Cashew Water (water used to boil the cashews)
  • 1/2 cup Vegan Cheese (we used Follow Your Heart parmesan)
  • 1 tsp Salt
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Smoked Paprika
  • 2 tsp Tapioca Starch
  • 1/2 cup Pretzels (we used gluten free)
  • 2 Tbs Cornmeal
  • Jalapeño Seeds for heat

INSTRUCTIONS:

  • Boil cashews in water for 5 min
  • In a blender add pretzels and corn meal, blend until pretzels are bread crumb texture
  • Place in a bowl and set aside
  • Cut jalapeños in half and use a small spoon to deseed them
  • Rinse the blender and add 3/4 cup of the cashew water
  • Add cashews, salt, garlic powder, onion powder, smoked paprika and tapioca starch to blender
  • Blend until smooth, remove into a bowl
  • Add cashew filling to the insides on the jalapeños and cover top with pretzel crumbs
  • Place on air fryer rack
  • Preheat the air fryer at 360°F for 5 min
  • Drizzle oil over the jalapeño poppers and place air frying rack in air fryer
  • Cook for 8 - 10 min
  • Serve hot with your favorite dipping sauce, we used vegan ranch dressing

Great flavor!

I have now used No Chix bouillon for potato and leek soup, and two pots of spicy sausage, white bean and kale (all vegan). I tend to add a little extra for a more hearty stock. The flavor is great. I love how simple and clean the ingredients are.
