Meatloaf is a classic holiday meal and super easy to veganize! Perfect for potlucks, holidays and sharing with family and friends. This recipe is super flavorful and delicious this dish will be a hit!
When you need to feed a lot of mouths a meatloaf is the perfect dish to make. We use Beyond Burgers to make this recipe but you can use your favorite "beefy" crumble. We use fresh herbs which gives it a ton of flavor. You can use dried but you won't get the same aroma.
This recipe requires 1 cup of bread crumbs and to make it gluten free we used Simply Mills Almond Crackers Sea Salt and blended them into bread crumbs. One box of crackers is just enough to make 1 cup of breadcrumbs. Instead of using oats in this recipe we used lentils. You'll need to soak the lentils for about 2 hrs ahead of time so be sure to start early.
This recipe is fairly easy to make but will take some time to bake. This recipe will make about 8-10 servings and takes about 1 hr 20 mins to make so be sure to start early.
INGREDIENTS:
- 4 Beyond Burgers (16 oz Beyond Beef/Beefy Crumbles)
- 1 Onion Medium (finely chopped)
- 1/2 Bell Pepper (finely chopped)
- 1 cup Green or Red Lentils (soaked)
- 4 cups Water
- 1 cup Tomato Sauce
- 1 cup Bread Crumbs (we used gluten free crackers ground)
- 2 Tbs Coconut Aminos
- 3 Garlic Cloves (minced)
- 2 Tbs Maple Syrup
- 1 + 1 Tbs Oil (we used Safflower)
- 1 tsp Basil (fresh, chopped)
- 1 tsp Rosemary (fresh, chopped)
- 1 tsp Thyme (fresh, chopped)
- 1/2 tsp Black Pepper
- 1/2 tsp Salt
- 1/2 tsp Smoked Paprika
- 1/2 tsp Cayenne
Glaze:
- 1/2 cup Ketchup
- 1 tsp Apple Cider Vinegar
- 1 Tbs Coconut Sugar
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
INSTRUCTIONS:
- In a mixing bowl soak lentils in water for 2 hrs
- Preheat oven to 375°F
- Chop onion, bell pepper, basil, rosemary, thyme & mince garlic
- In a frying pan add 1 Tbs oil on medium heat
- Cook onion, bell pepper & garlic stirring occasionally until onions are translucent
- Drain the lentils and add all the ingredients & mix well
- In a 10" x 15" Pyrex dish shape the mixture into a long loaf
- Cover with foil and bake for 45 mins
- Make glaze: in a bowl add all ingredients and mix well
- Remove meatloaf from oven, uncover and spread glaze over the top
- Leave uncovered and bake another 20 mins
- Remove from oven and slice into 1" thick pieces
- Serve with your favorite sides like mashed potatoes, roasted veggies, etc.
