Cauliflower Tater Tots

These lil cauliflower tots are not only healthy but delicious! They're gluten free and once you start you can't stop. You'll wish you made a triple batch!

Hey friends! I'm so glad you're here because I want to share this fun lil treat with you! If you follow me on Instagram you already know I went to Planta for bday dinner #3 :D

I got inspired by their tots which I've had before at the TO vegan fest over the summer but it was way better at the restaurant. They were so good I had to make my own version so I could enjoy them whenever I felt in the mood. 

These cauliflower tots are vegan and gluten free! Full of flavor and perfectly crispy. Make and share with your family and friends or if you're like me eat the whole batch to yourself :P Whenever I make these they sure go quick! You can make a double batch if you want to enjoy some extra. #hellaphatvegan #hellagood

INGREDIENTS

[A]

  • 4 cups of riced cauliflower
  • 1/2 medium minced onion 
  • 2 tbs minced garlic

[B]

  • 1 tbs flax meal
  • 3 tbs water


[C]

  • 2 tbs potato starch
  • 2 tbs tapioca starch
  • 1/4 cup nutritional yeast
  • salt & pepper 

OTHER

  • 2 cups gluten free pretzels crushed into crumbs
  • 1 cup water
  • Grapeseed oil or other high smoke point oil for frying


SAUCE

  • Vegan mayo
  • Ketchup
  • Mustard

INSTRUCTIONS

  • Cut cauliflower into florets. You can use a fresh cauliflower head and cut into florets, pre-made cauliflower rice or I used a bag of frozen cauliflower florets for my recipe

 

  • Combine [A] into a food processor. I put the onion and garlic close to the bottom to ensure it gets chopped well

 

  • Run the food processor until you make cauliflower rice. Don't over process. You want it to look like rice and not mashed potatoes. Using frozen helps prevent over processing

  • Set aside
  • Combine [B] into a small bowl and mix well. Place in the fridge until needed

  • Bring one cup of water to boil in large pan
  • Add [A] mixture to the pan and cook on medium heat

  • Stir occasionally until all the water has cooked off approximately 10 min
  • Once [A] is cooked remove from heat and add to large mixing bowl

  • Add [B] & [C] to [A] and mix well

  • Add 2 cups of gluten free pretzels to blender and grind until a power/bread crumb consistency

  • Transport pretzel crumbs into a small bowl
  • Ball [A/C] to desired size and roll in the pretzel crumbs

  • In a medium pan pour oil to cover the bottom of the pan. Make sure there's enough oil to fry the tots
  • Place breaded cauliflower tots in pan and fry until crispy on the bottom. Check the bottoms to make sure they are a golden brown. Turn over and fry the other side until golden brown

  • Place fried cauliflower tots on a plate with paper towel to absorb the excess oils
  • Serve hot with your favorite sauce or use my recipe:
  • 2:3 vegan mayo 1:3 ketchup and a small amount of mustard or you can tweak it to your liking :D
