Chinese Beefy Sauce Over Rice Noodles

This beefy saucy dish is so delicious and packed with tons of flavor! If you've ever grown up eating something similar it will bring back the memories. I never thought I'd be able to eat this meal again going vegan but with beyond meat products and our No Beef Bouillon (coming soon) you can make anything beef!

Both my parents and Sean's parents used to make similar dishes to this one here. Similar to stroganoff but with an Asian twist. I'm pretty sure this is a Chinese dish but I can't find the name or maybe it's simply just noodles with beef gravy! Anyways here's the recipe and I hope you enjoy :D

INGREDIENTS:

  • 2 Beyond Burgers or 1/3 package of Beyond Beef
  • 1/2 yellow onion sliced
  • 1 cup frozen spinach
  • 1 cup frozen broccoli
  • 5 shiitake mushrooms sliced thinly
  • 1 package of brown gravy + water based on package
  • 2 TBS No Beef Bouillon (not released yet so optional for extra beefy flavor) + 1 cup water + 1 TBS rice flour
  • 1/3 package of rice noodles

INSTRUCTIONS:

  • Slice onion and mushrooms
  • In a large pan add high temperature oil (we used safflower) on medium heat
  • Add sliced onion, mushrooms and frozen broccoli
  • Add a little bit of water and cover pan with lid to cook
  • Once vegetables are mostly cooked add in the beyond meat and break up into bits
  • Also, add in the frozen spinach
  • Add more oil if needed and cook
  • Now cook the noodles based on the packaging (typically boil water, add rice noodles, boil for about 5 minutes and then strain)
  • Mix together the gravy powder with the No Beef Bouillon + rice flour if using
  • Add water and whisk until mixed well
  • Add gravy mixture to the pan with the veggies and beyond
  • Bring to a boil and continue to stir until the gravy thickens and creates a sauce
  • To serve add rice noodles to serving plate and pour the beefy sauce over the noodles

Great flavor!

I have now used No Chix bouillon for potato and leek soup, and two pots of spicy sausage, white bean and kale (all vegan). I tend to add a little extra for a more hearty stock. The flavor is great. I love how simple and clean the ingredients are.
