Growing up in a Chinese-American household my family would always sit down for home cooked family style Chinese food. One dish that would make its appearance regularly was tomato and egg stir-fry. It's funny how I never really appreciated the food my parents would cook for us growing up until I became an adult and went vegan. I haven't had this dish is years and I never thought to veganize it until recently. Now that there are more vegan alternatives like Just Egg we can veganize any dish! We don't think that Just Egg tastes like egg so we like to mix it with our No Egg Seasoning to give it the perfect eggy flavor. You can use your favorite egg alternative there's actually quite a bit of options these days: Follow Your Heart, Simply Eggless & Eggcitables.
This recipe is extremely easy to make and uses super simple ingredients. Pair with rice for a complete meal or serve with your other favorite Chinese dishes for a family style meal.
INGREDIENTS:
- 2 Tomatoes (large beefsteak, cut into thin wedges)
- 1/4 cup Green Onion (chopped)
- 1/4 tsp Sugar (we used organic, not all sugar is vegan!)
- 1 cup Just Egg
- 1 tsp No Egg Seasoning
- Oil for frying
INSTRUCTIONS:
- Add Just Egg and No Egg Seasoning to a bowl and whisk until combined
- Cut tomatoes into thin wedges removing the hard node at the top
- Chop green onions
- Add oil to pan on medium heat
- Cook Just Egg until partially cooked, set aside
- Add oil to pan on medium heat
- Cook tomatoes and green onion (save some for garnish if desired)
- Add sugar, stir occasionally until tomatoes are soft, about 5 mins
- Add Just Egg and mix together, cook for another couple mins
- Serve with white rice and garnish with green onion (optional)
