Here's another amazing vegan summer recipe that will knock your socks off! We've made the most incredible chicken salad using young jackfruit and No Chick Bouillon. We made sandwiches with this chicken salad recipe and used vegan croissants from Whole Foods. If you haven't tried their croissants before they are incredible! Or you can use your favorite kind of bread. They're even good with crackers, chips, veggies or even in a salad. This recipe will make about 5 sandwiches.
If you haven't cooked with jackfruit before I highly recommend it. It has the perfect meaty texture, can absorb any flavor and filled with vitamin C, potassium & dietary fiber. INGREDIENTS:
Chicken Salad:
- 2 x 20 oz cans Young Jackfruit (in brine)
- 1/2 cup Vegenaise
- 1 rib Celery (chopped)
- 2 Tbs Red Onion (chopped)
- 2 Tbs Pickles (chopped)
- 1/2 tsp Dijon Mustard
- 1/2 Tbs No Chick Bouillon
- 1/4 tsp Apple Cider Vinegar
- 1/2 tsp Dill (we used fresh, but you can use dried)
- 1/8 tsp Pepper
Sandwich:
- Bread (you can use vegan croissants, bread slices, french bread or your favorite)
- Lettuce
- Tomato (sliced)
- Optional: Avocado (sliced or smashed)
INSTRUCTIONS:
- Drain, rinse & dry jackfruit
- Cut the cores off and discard
- Smash the jackfruit to remove the seeds and to break it up into shreds
- Chop celery, red onion & pickles
- In a mixing bowl add all the ingredients and mix well
