Vegan Shredded Jackfruit Chicken

You can now make amazing vegan chicken with only 2 simple ingredients!

You'll need canned young green jackfruit in brine or water (make sure it's not sweet jackfruit) and No Chick Bouillon for that authentic chicken flavor. This vegan shredded chicken goes great in tacos, salad, sandwiches, enchiladas - use it as you would regular chicken.

INGREDIENTS:

  • 2 - 20oz cans Young Green Jackfruit (in brine or water)
  • 2 tsp No Chick Bouillon
  • 1 cup Hot Water
  • Oil for frying (optional)

INSTRUCTIONS:

  1. Cut the cores off the jackfruit
  2. Smash jackfruit and remove seeds until you're left with shreds
  3. Rinse jackfruit and squeeze out the water using a cheesecloth
  4. Add jackfruit into a bowl and set aside
  5. In another bowl make broth
  6. Add hot water and 1 tsp of No Chick Bouillon
  7. Stir until dissolved
  8. Pour broth over the jackfruit ensuring it is completely submerged 
  9. Cover and marinate in the fridge for about an hour
  10. In a large pan on medium high heat add the jackfruit and broth
  11. Bring to a boil and allow the broth to cook off
  12. Add some oil and 1 tsp of No Chick Bouillon
  13. Mix and cook for about 5 mins, stirring occasionally
  14. Serve in tacos, salads, sandwiches or with your favorite dish!

Great flavor!

I have now used No Chix bouillon for potato and leek soup, and two pots of spicy sausage, white bean and kale (all vegan). I tend to add a little extra for a more hearty stock. The flavor is great. I love how simple and clean the ingredients are.
