Watermelon is the perfect summer fruit! Super sweet and juicy it makes an incredible juice. As you can tell from its name it's full of water about 92% of it is water so it will definitely keep you hydrated on a hot day. It's also full of fiber so it will help you feel full and is great source of vitamin C and A (21% and 18% of your recommended daily intake.) This recipe is part of our #HellaPhatSummer recipe series where we share amazing vegan summer recipes. Check out our blog for more summer recipes!
For this recipe we used mini watermelons and frozen strawberries to make it cold. You can also use fresh strawberries and add ice to make it cold. We recommend using a high speed blender to make this juice so it's extra smooth. We like to keep the pulp in for the fiber but if you prefer you can use a nut milk bag to strain it out. You can double this recipe to make a pitcher and serve it at your next BBQ potluck!
