Amazing Homemade Vegan Chili

This recipe is better than store bought! Never buy canned chili ever again with this easy recipe. The perfect comfort meal! Eat with chips, mac & cheese or on its own.

Winter is coming and there's nothing more enjoyable than cuddling up with a nice warm bowl of chili. I was shocked how delicious this chili recipe came out and you will too! It's simple and quick to make.

INGREDIENTS:

  • 1 - 15.25 oz can Red Kidney Beans
  • 1/4 cup Red Kidney Bean Water (save from the can)
  • 1/2 cup Soyrizo
  • 2 Tbs Red Enchilada Sauce
  • 1/2 cup Vegan Cheese Shreds
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Smoked Paprika
  • 1/4 tsp Cayenne Powder

Optional

  • 1 Jalapeño (optional for spicy. Diced, we used picked)
  • Vegan Cheese Shreds for topping
  • Vegan Sour Cream for topping
  • Green Onion (chopped for garnish)

INSTRUCTIONS:

  • In a saucepan on medium heat add all the ingredients
  • If using jalapeño dice and add to saucepan as well
  • Mix well and break up the Soyrizo into bits
  • Bring to a boil and reduce to simmer
  • Cook for about 5 min
  • Serve with sour cream and cheese on top and eat with bread, crackers or on its own

Great flavor!

I have now used No Chix bouillon for potato and leek soup, and two pots of spicy sausage, white bean and kale (all vegan). I tend to add a little extra for a more hearty stock. The flavor is great. I love how simple and clean the ingredients are.
