Winter is coming and there's nothing more enjoyable than cuddling up with a nice warm bowl of chili. I was shocked how delicious this chili recipe came out and you will too! It's simple and quick to make.
INGREDIENTS:
- 1 - 15.25 oz can Red Kidney Beans
- 1/4 cup Red Kidney Bean Water (save from the can)
- 1/2 cup Soyrizo
- 2 Tbs Red Enchilada Sauce
- 1/2 cup Vegan Cheese Shreds
- 1/2 tsp Garlic Powder
- 1/4 tsp Smoked Paprika
- 1/4 tsp Cayenne Powder
Optional
- 1 Jalapeño (optional for spicy. Diced, we used picked)
- Vegan Cheese Shreds for topping
- Vegan Sour Cream for topping
- Green Onion (chopped for garnish)
INSTRUCTIONS:
- In a saucepan on medium heat add all the ingredients
- If using jalapeño dice and add to saucepan as well
- Mix well and break up the Soyrizo into bits
- Bring to a boil and reduce to simmer
- Cook for about 5 min
- Serve with sour cream and cheese on top and eat with bread, crackers or on its own
