These tostadas are shockingly delicious and super crispy! Perfect dish to make for lunch or dinner. Quick and easy to make!
Mexican food is one of the easiest things to make vegan and it's definitely a favorite in our household. We pan fried corn tortillas in oil to make the perfect crispy tostadas. You can also use store bought tostadas if you prefer. We also use our homemade cashew sour cream to take this dish to a whole new level!
We use Beyond meat in this recipe to make the "beef" but you can use your favorite beefy crumble. With so many plant based meats these days you can veganize any dish!
INGREDIENTS:
- 6 Corn Tortillas
- 1 can Refried Beans
- 2 Beyond Burger Patties or 8 oz of Beyond Beef
- 1/4 cup Onion (diced)
- 1/2 cup Lettuce (chopped)
- 1/2 cup Vegan Cheese (we used Cheddar style)
- 2 + 1 Tbs Oil (we use Safflower)
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1/4 tsp Cumin
- 1/4 tsp Smoked Paprika
- 1/4 tsp Oregano
- 1/4 tsp Cayenne
- Vegan Sour Cream
- Hot Sauce (we used Valentina)
- Optional: Cilantro (chopped)
INSTRUCTIONS:
- Chop lettuce, onions & cilantro if using
- Add 2 Tbs oil to medium frying pan on medium/low heat
- Fry the tortillas on each side until crispy
- Place on a plate with paper towels to absorb the oil
- In another frying pan add 1 Tbs oil on medium/high heat
- Add Beyond or other beefy crumbles to pan (if using burgers break into small pieces with spatula)
- Add onions, salt, pepper, cumin, smoked paprika, oregano & cayenne
- Mix well, allow to cook for about 7 min, stir occasionally
- Heat up refried beans on stovetop or in the microwave
- Assemble tostada:
- Spread beans on the bottom of tostada
- Add layer of Beyond
- Sprinkle lettuce and cheese on top
- Pour sour cream & hot sauce on top
- Optional: Garnish with cilantro
